Mixed Vegetable Manchurian






Vegetable/Gobi Manchurian is one of my favorite snack item and many say that we should avoid eating it outside because of the factor that it might not be cleaned/or prepared properly with good oil..
I always used to think of preparing this dish at home and always stopped myself thinking that its a very complex process to prepare at home.

Definitely its little time consuming, but I would say give it a try when you are free at home or any weekends. Who doesn't like the Manchurian if its made at home...!!! 

 I have tried the mixed vegetable Manchurian here and you believe it or not..it came out very well and tasted good than the Gobi Manchurian version


Ingredients for Veg Manchurian balls:

Grated Cabbage-1/2 cup
Grated carrot-1/2 cup 
Capsicum-1/4 cup
Beans-1/4 cup
Spring onion-1/4 cup(I have not used spring onion in below recipe)


For veg Manchurian gravy:
1 tbl spoon finely chopped garlic
1 tbl spoon finely chopped ginger
4 tbl spoon finely chopped onion
2 green chilli
2 tbl spoon coriander leaves 
1-2 tbl spoon of oil
1 spoon pepper powder
1/2 tbl spoon soya sauce
1 tbl spoon tomato sauce
3 spoons of red chilli sauce

Method:

1) Finely chop the vegetables. Grate the carrots. Take finely chopped vegetables in a boul. 

2) Add 2 spoons of Maida, 1 spoon of corn starch, 1/2 spoon pepper powder, salt and mix.


3) Make small balls of vegetables. If the veggies are dry, unable to make the balls add 1 or 2 tbl spoons of water and make the balls. add 1 more tbl spoon of Maida if needed. Since veggies leave water and ball becomes soft be careful while adding water.



4) Once the veggie balls are ready, its time for deep frying them. Take a kadai and add oil and allow it heat.
once its heated enough, add the balls and fry. Remove the balls and put on tissue paper and let the extra oil drains away.



For corn starch paste:

1 tbl spoon corn flour
2 tbl spoon of water

5) In a small boul, add 1 tbl spoon of corn flour and 2 tbl poon of water and mix it thoroughly.


To make the veg manchurian gravy:

6) Take a small cup and add 1/2 spoon soya sauce, 1 tbl spoon tomato sauce, 2-3 spoons of red chilli sauce. mix well and keep aside.



7) Take a frying pan add oil and heat it.
 Add chopped ginger garlic and fry.
Add chopped onion and green chilli(green chilli is optional)

8) Add the prepared sauces mixture and corn floor paste, stir it.


9) Add pepper powder if you like the spicy taste. add salt. since sauces have already salt in it add salt accordingly.

10) Add the Manchurian balls. mix it thoroughly.

11) Add chopped coriander leaves and mix it and serve it hot

Honey is one more medicinal item which is easily available in home.

Give a spoon of honey to the kids when they are suffering from cold and cough. 

Drinking warm water with a spoon of honey will also help in weight reduction.

How to prepare Soya beans curry:



Soya bean is rich in protein,has rich source of nutrients.and definitely this bean should be part of our healthy diet.

Since cooking soya beans requires a lot of time for cooking we need to soak this overnight and also many think that this is very complex food to prepare. Well..!! I have tried a simple recipe to make the curry and this can be used as a combination along with dosa, chapati,,roti and rice too...


Ingredients:

Soya beans- 1 glass(soak the soya bean overnight)

Onion-2
Tomato-1
Ginger garlic paste-1 spoon
Coriander leaves- small cup

Turmeric powder-1 spoon
Garam masala- 1 spoon
Red chilli powder-1 spoon
Dhanya powder-1 spoon
Salt- to taste


How to prepare soya bean curry:


1) wash soya beans and soak them overnight in water.


2) Add soya bean, and water and add a little salt in the pressure cooker and cook till you get 4 whistles.

3) Grind 1 tomato and keep it aside (I have ground it to give some thickness to the curry and also I am not adding coconut to this).

4) Take a frying pan and heat it. 

5) Once the pan is hot, add oil.

5) Add ginger garlic paste and fry for some time.

6) Add chopped onion and fry it.

7) Add the ground mix of tomato and fry till the raw smell goes

8)  Later add Turmeric powder and masala powders as mentioned in the ingredients list. stir it thoroughly.

9) Add cooked soya beans along with the cooked water of soya beans. and let it cook for 10 min.

10) Once it starts boiling, add finely chopped coriander leaves on top.

11) Now the delicious protein food soya beans curry is ready to eat.

 

This can be eaten along with dosa/chapati/ roti's and rice too.

Dal sambar(ಬೇಳೆ ಸಾರು) | How to prepare toor dal sambar | Easy sambar preparation steps


How to prepare Dal sambar:


Ingredients:


Toor dal-2 cups
Tomato -1(optional)

For tempering:
Mustard seeds- 1 tea spoon
Jira-1 tea spoon
Onion - 1
Curry leaves
Garlic-2-3
Red chillies -3-4
or
Sambar powder -1 spoon
Coriander leaves- 1 small cup


Method:

1. Wash toor dal and place it in cooker. Add tomato and 
add double the water to cooker and little salt for taste.
and let it cook till 2-3 whistle comes.


2. Take a vessel, heat it. 

3. Add mustard seeds, jira and oil and let it splutter.

4. Later add finely chopped onion,garlic, 2-3 red chilli and curry leaves and fry. if you want you add 1/2 or 1 spoon of sambar powder to it.


5. Later add cooked or smashed dal, salt for taste and let it boil.

Now simple and easy dal is ready to eat.



This can be eaten with plain rice, jira rice/ or with chapatis or rotis.

Samia Upma | Shavige Uppittu | Quick recipes for mornings


How to prepare Samia Upma /Shavige Uppittu:


This is a perfect breakfast and quick recipe and my daughter loves this for evening as a snack too. Instead of ready noodles available in markets, we can prepare this healthy version of food with the home made ingradients/ masalas.

I have used MTR's vermicillie packet to prepare this and many more brands you get to chose in the market.

Ingredients: 

Samia/vermicilli: 1 glass
Onion-1 medium
Tomato-1 medium
Oil- 2-3 tbl spoon

For tadka:
Mustard seeds
Channa dal, moong dal, urad dal-each 1 spoon
Curry leaves
Coridander leaves
Salt for tatse
Turmeric- 1 pinch

How to prepare Samia Upma:

Take a pan and roast the Samia in little oil(this gets roasted very quickly, so keep the flame low and also constantly stir the samia) and keep aside.

Take the pan and add mustard seeds and oil and allow it to heat.
later add chenna dal, moong dal, urad dal and curry leaves

Later add Onion, green chilli and fry till it .Once onion becomes little golden brown in color, add tomato and salt and fry it. once frying is done add water and let it boil.

Water quantity should be equal to the quantity of samia you have taken. or little more than that.
(For rava upmas you take double the quantity fo water)

Let the water starts booil in pan..Once the water starts boiling add the roasted samia and mix well.
Close the lid for 10 min, so that let it get cooked in steam
Now the samia upma is ready to eat.









Some Home remedies with easily available items in the house:

Mustard oil  has many health and medicinal benefits. 

When you have chest congestion, warm 2,3 spoons of mustard oil, apply and do light massage on the chest area. you can find some quick relief from chest congestion. this also helps for wheezing problems.

You can also use this for kids who have cough and congestion and trouble breathing during sleep. 

  

Easy Veg sandwiches


Veg sandwiches recipies:



Bread sandwich is a good breakfast/ lunch/tea time snack item too. and a quickly prepare with not much effort. Kids/elders love this too and can. this can be served with any sauces, chatnis.


Masala for bread sandwich:

Take a pan and add 2 spoons of oil heat it. later add finely chopped onion,green chilli and finely chopped potato. and fry till it becomes translucent.

Later add finely chopped tomato, add garam masala/ sambar powder and salt. and fry till it becomes soft and raw smell goes away.

For bread sandwich:

In a frying pan, heat/or warm the bread on both the sides.
add masala inside it.

Now the yummy bread sandwich is ready to eat..serve the bread sandwich with a tea.

and along with potato, you can add green peas, finely chopped or any other vegetables of your taste.

Note: I have not used the toaster/griller for preparing this item. If you have toaster you can add the same masala and toast it also.




Pepper Chicken | Easy chicken recipes



Pepper chicken is a soft and spicy dry fry item and usually I prepare this sometimes in weekend/ or when guests is visiting us. I sometimes prefer this over chicken kabab's as it doesn't require to deep/shallow fry it and the taste come out very well and delicious...!!



Ingredients:

Chicken-500grams

Onion-2
Green chilli-4-5(based on how much spicy you like to eat)
tomato-1
Ginger garlic paste-1 1/2 spoon
Curd- 2-3 tbl spoons(to marinate)

Masala powders:
Garam masala- 1 spoon
red chilli powder- half spoon
Dhanya powder- 1 spoon
Turmeric- 1 tea spoon

Curry leaves
Coriander leaves
Oil to fry the chicken-2-3 tbl spoon


Method to prepare:

1.Clean the chicken by adding salt and turmeric.add little curd to it and keep aside to get marinated till you prepare other items.

2.In a frying pan, add oil and curry leaves.

3.Add finely chopped onion  green chilli and fry for sometime.
and then add ginger garlic paste into it.

4.Next add tomato. once tomato become soft, add garam masala powder, dhanya powder and red chilli powder and salt.

5. Later add cleaned chicken, mix well and close the lid( I have not boiled chicken before and i am directly adding the cleaned chicken to it.

6.at last add pepper powder and coriander leaves to garnish.

Now pepper chicken is ready to eat.





Chicken Biryani..karnataka style | How to prepare chicken Biryani


Chicken Biryani is one of my favorite non-veg dish and there are many popular recipes of this.
I have tried the Karnataka style/little customized version of biryani here.

I usually like the spiced rice which is cooked along with chicken and masalas when compared with the dhum style of biryani's. when the rice is cooked along with chicken and masala's rice comes out very delicious and spicy too..!!

Ingredients:
Chicken-250 grams

Onion-2
Tomato-1
Giner garlic paste- 1 spoon
Green chilli-4-5
Turmeric powder- 1 tea spoon
Rice- 1 or 1.5 glass(serves 3-4 people)

Cardamom-2-3
Cloves-2-3
Biryani leaf-1-2

Mint leaves(Pudina)- 1 small cup
Methi leaves-2 cups
coriander leaves- 1 small cup

For masala to grind:
Ginger, garlic paste- 1tbl spoons
coconut- 2-3 tbl spoons
Green chilli-2-3(this can be varied if you want little spicy biryani's)
Corinader leaves- 1 cup

Method:

1. Wash rice and keep it aside. Wash chicken with salt and turmeric and keep aside.

2. Clean all green veggies,chop it and keep it aside.

3. In a frying pan, boil chicken with a spoon of oil, ginger garlic paste, little turmeric and  salt

4. meanwhile, Grind  coconut, tomato, ginger garlic,green chilli, coriader leaves and make paste(if you want you can skip grinding chilli and directly add it to frying pan)

5. In the vessel, add oil, cloves, cinnamon, cardamom, biryani leaf and fry for sometime
 add little onion(half chopped onion),fry till it turns gold color.

6. Add pudina, methi leaves, coriander leaves and fry till the raw smell of leaves goes away.



7. Add grounded masala and fry it for sometime
8. Add half boiled chicken and fry it.


9. Later add washed rice,saute it for sometime.



10. Add salt for taste and water(as per measurement.usually for 1 glass of rice add double the water)


11. Once when the water is about to drain close the lid and allow it to cook. cook it for around 15 min.

Now Chicken biryani is ready. 

Serve this hot with lemons, onions and curd or raita.





Healthy Sabsige soppina Uppittu | Sabbasige soppina Uppittu | Healthy and aromatic DiI leaves upma - Recipe steps with pictures

How to prepare Sabsige/ Sabbasige Uppittu:



 

Upma is a South Indian breakfast/snack food item and I love this food all the time.
Most of the people don't like rava upma, saying this has a blond taste. But believe me, there are many combinations you can think of with rava upma and surely you will love those customizations..!!

Here in this recipe, I have used dill leaves(sabsige soppu in kannada) which makes a good combination with rava. and the aroma of the dill leaves just makes the Upma delicious and aromatic !!!


Speaking about Dil leaves health benefits, who doesn't know about it right..!! It promotes digestion, helps in lactation for nursing mothers, rich in iron
and calcium and has many other benefits.

So let's see how to prepare this healthier and tastier Upma recipe now:
  

Ingredients for Dill leaves upma:

Bansi Rava/normal upma rava- 1 glass
Onion-2
Tomato-1
Green chilli-3-4

Channa dal-1 spoon
Moong dal-1 spoon
Urad dal-1spoon

Dill leaves-1 or 2 cups( clean and chop the leaves finely)

Curry leaves-2 strands
Mustard- 1 teaspoon
Oil-3-4 spoons

Optional:

Grated coconut- 2 tablespoon grated coconut
Coriander leaves- 2 tbl spoon

Method: How to prepare Sabsige Soppina Uppittu:

1. Take a frying pan, and put 1 or 2 spoons of oil, and fry the rava on low flame till you get an aroma. and keep it aside


2. Take a pan and heat the pan and add oil, mustard, curry leaves. 

3. Next add chenna dal, urad dal, moong dal, and fry.

4. Next add onion and green chili and fry till the Onion is fried nicely and turned golden color.



5. Then add dil leaves and fry till raw smell goes.


once dil leaves are fried enough, quantity seems to be reduced



6. Later add chopped tomatoes and fry. Fry till tomato becomes soft and mushy. you can add coriander leaves(it is optional since you already added dil leaves).


7. Later add water( add double the glass compared to rava). and add salt as per taste and let the water boil.

8. Once the water boils add roasted rava and mix thoroughly so that no lumps are formed. Close the lid and cook in low flame for 5 minutes.



9. At the end garnish the upma with grated coconut.
Now the healthy and aromatic and tasty Dil leaves Rava upma is ready to eat.



Now You can eat this upma or sabbasige uppittu along with Chatni / curd / or as it is..!!
