How to prepare Masala Rice bath | Have you tried this colorful and tasty masala Rice Bath?

Masala Rice Bath: 


Rice is major part of food in south India, whether its a morning breakfast or afternoon lunch or evening dinner, rice must be there in any of the format for South Indians.

For breakfast, there are many masala or rice baths versions of recipe available in South India. Many would have tried different types of pulao rice or vegetable bath rice items. But trust me if you try this recipe, you will like this most...!!

This is one of the delicious item I have learned from my sister and I am sharing this recipe. 


How to prepare masala rice bath:


Ingredients:


Rice-250 grams 

Mixed vegetables-1 big cup 
(Chose different kinds of vegetables and green peas, I have used Beans, Potatoes and carrot)

Cloves- 4-5
Star anise- 1 to 2 
Bay leaf- 2
Cinnamon stick-1 to 2
Cardamom -  2 to 3
Onions - 2 
Tomatoes - 2,3
Ginger garlic paste- 1 spoon
Black pepper- 3-4
Coriander leaves- 1 cup

Curd- 1 small cup

Oil-4 spoon
Salt-for taste

Extra ingredients used for masala rice bath(Taste maker):
Byadagi red chilli:   8-10
(Byadagi red chilli is important ingredient here and gives the rich red color to the bath)
Red chilli:          2-3
Coriander seeds:         1 tbl spoon

To grind:
Firstly you need to fry below-mentioned ingredients in medium flame and then grind it.

Byadagi red chilli:8-10
red chilli:          2-3
coriander:    1 tbl spoon
Coconut paste: 1 small cup
1 onion: sliced
2 small tomatoes
Clove: 3 to 4
Cinnamon stick: small pie
Coriander leaves-1 small cup
black pepper



Method-Step by step procedure of Masala Rice bath:

1. First
 you need to fry all these ingredients(which is in 'To Grind' list ) in medium flame and then grind it.

2. Take a vessel. add oil,cloves, cinnamon stick, cardamom, star anise,bay leaf and fry for sometime.

3. Add 1 more sliced onion, ginger garlic paste and fry

4. Add all the veggies and fry it.

5. Add grounded coconut, tomato,masala paste and fry it.add 1 small cup of curd to it(curd gives that extra flavor also).

6. Add washed rice and coriander leaves. and saute for sometime

7. Add water and close the lid.cook till 15-20 min.

8. If you are preparing in a pressure cooker, let it cook for 2 whistles.
and serve it hot and tasty Vegetable masala rice bath is ready to eat





Karnataka Nati style Fish Sambar Recipe | How to prepare Fish sambar with authentic Karnataka style | Fish sambar recipe with less ingredients



Here I have listed a different style of Fish sambar recipe which is prepared in Karnataka and village style. You don't require to use more ingredients for this sambar. with fewer ingredients, nice aromatic fish sambar will be ready to eat.


How to prepare Fish Sambar : 

Ingredients needed:

Fish ->1  kg(I have used catla fish)


Turmeric -> 2-3 tea spoons

Salt for marination

Tamarind juice-> 1-2 small cups


To grind/ For masala:

Coconut ->1 cup grated

Onions-> 2

Poppy seeds->2-3 spoons
(you need to add poppy seeds in more quantity for this recipe compared to your regular measures)

Cloves-> 4-5

Cinnamon-> 1-2 medium pieces

Sambar powder-> 2-3 tbl spoons

Coriander leaves-> 1 small cup 

Fried gram(Hurigadale) -> 1-2 tbl spoon

Ginger grlic paste- 1 tble spoon (or less)
(In nati style, we dont add ginger garlic paste more or you can even skip it)


For tempering:
Curry leaves-> 2-3 sticks of leaves

Onion->1 small one

Preparation time: 30-40 min


Recipe or Method:
1. Clean the fish thoroughly. Add turmeric and salt and keep it aside


2. Roast onions in little oil before grinding.

Grind all the above-mentioned masala and keep it ready.
Note: here in this recipe, I have not used ginger garlic paste. Poppy seeds needs to be added more

3. Next take a vessel for preparing sambar, heat the vessel.

4. Add Oil, Curry leaves, medium sliced Onion, and fry till onions become translucent.

5. Add Grounded masala, and fry the masala paste till the raw smell goes away

6. Add Tamarind juice accordingly and also add water to the required quantity. 1st add 1 cup of juice 1st and see the sourness. If you need a little more sourness add some more tamarind juice.

7.Adjust salt as per your taste and let it boil

8. Once Sambar is cooked and boiled enough(let it boil for 10 min at least), later add fish to it.
Once you add the fish you shouldn't stir the sambar since the fish cooks very quickly and will break.


9. Leave the fish to cook in sambar till 15-20 min. and serve it hot with rice and Ragi balls.

Fish sambar recipe in Karnataka style | How to prepare Fish sambar | step by step recipe of fish sambar with pictures

Ingredients:

Fish - 1 kg
(I have used Bangda fish. you can add catla or any other type of fish also instead of this)

For masala paste:

poppy seeds - 2 spoons,
cinnamon and cloves - 1 spoon,
coconut -1 cup,
Onions - 
3 medium,
khara pudi( sambar powder)-2 to 3 spoons
Tomato-1-2 medium
Ginger garlic paste-1 spoon

Tamarind- 1 small boul
Salt for taste

Method:

1. Clean the fish and drain them.Add turmeric and salt to the fish and keep aside.
2. Take above-mentioned masala items and fry them in oil for some time till it loses its raw smell.




3. Grind them well


4. Soak tamarind and squeeze to take out the juice.

5. Take a vessel and heat it. Add oil, curry leaves,1 more sliced onion and fry.

Then add grounded masala, and fry

6. Add tamarind juice, salt and let it cook till it reaches boiling point.

7. Once sambar starts boiling, add cleaned fish pieces and boil for 10-15 min.

Note: Once you add the fish into the masala dont stir it and mix it often. Since fish is very delicate, it will break into small pieces. Fish also cooks very faster. so dont cook more than 15 to 20 min



8. Now Fish sambar is ready to eat. Serve this with Ragi balls and Rice. This goes well even with roti's or Dosa also. Eat with any of your favourite combo and enjoy..!!
